VEGETABLE BIRIYANI

INGREDIENTS

1.Basmati rice-1 kg
2.Carrot-1
3.Cabbage-half
4.Beans-8
5.Capsicum-half
6.Onion cut into pieces-3
7.Ginger garlic paste-little
8.Green chilly-4
9.Corriander leaves\,salt-as required
10.Cashewnut,kismis-as required for frying
11.Cardamom,cinnamon,cloves,pepper-6
12.Cumin seeds-little
13.Lemon juice-little
14.Oil-for frying


METHOD


1. Put in a pan oil and  fry little onion till golden brown and keep aside.In that same oil fry cashewnut,kismis, carrot,capsicum,cabbage,beans,ginger garlic paste seperately and keep aside.
2.Also saute green chillies along with it.
3.Put in a pan 4-5 glass water and add little salt and lime juice to it and when it starts to boil add cinnamon,cardamom, cloves,fennel seeds,pepper and when it starts to boil add soaked and cleaned basmati rice to it after straining off excess water from it.
4.Cook for half an hour and when rice is cooked strain off excess water.
5.Arrange and serve first rice ,then cashewnit,fried onion,sauted onion,green chillies,fried vegetables, corriander leaves,kismis and serve hot.
6.If necessary add a drop of ghee on top of rice.
